Zucchini Side Dish
(This is an extremely
delicious side dish. It can be made
ahead of time and reheated for company!)
Ingredients:
3 tbsp. olive oil
6 cloves of garlic,
minced
½ cup of chopped onion
4 cups of shredded
zucchini (1 large zucchini)
½ cup cream
4 ounces of cream cheese,
cut up
¼ cup fresh chopped basil
¼ tsp. salt
1/8 tsp. cayenne pepper
½ cup grated Parmesan
cheese
Directions:
Microwave the zucchini
for 4 minutes on power level 8. Place in
a colander and press with a potato masher to squeeze out the excess liquid.
Heat the oil in a large
pot.
Sauté’ the garlic and
onion in the oil until transparent and slightly browned.
Add the strained
zucchini, and cook for about 7 minutes.
Pour the cream into the
pot.
Stir in the cream cheese
until melted.
Mix in the basil, salt,
pepper, and Parmesan cheese.
