Top three reasons to stay away from wheat gluten



If you do not have time to read my super long article on “going gluten free”, here are the top 3 takeaways.

Top three reasons to stay away from wheat gluten are:

1.)  Ancient varieties of wheat consisted of 28 chromosomes and stood 4 ½ feet tall. Today it comprises of 42 chromosomes and stands 2 feet tall (and we still for some reason call it wheat). When you consider how humans are only 2 chromosomes away from an ape it really makes you think twice about eating such a highly genetically modified grain.  

2.)  Whatever wheat really is, or whatever you want to call it, many people have difficulties digesting it, which can contribute to feeling sluggish and weight gain. Additionally, recent research found that gluten can stimulate an assortment of serious diseases in an increasing number of people throughout the world.

3.)  It has never undergone human or animal testing for safety!

Low Carb Paleo Bread

We have been researching greatly, and have never seen anything like this.  This bread is delicious without butter.  It is moist and has a wonderful taste and texture.  We have had it for dinner with family and everyone loves it--including the kids!  We are so thrilled to share it with you.  All we ask is that you put a comment on our site to let us know what you think!  Enjoy!

Thin and Thinner Bread Recipe:

Makes 14 slices of delicious low carb paleo bread!  Time for a sandwich!

Dry Ingredients:
1 ¼  cups of almond flour
¼ cup of coconut flour
1 ½ tsp. baking soda
1/8 tsp. baking powder
½ tsp. salt
1 tbsp. xylitol (or other sweetener of choice)

Wet ingredients:
4 eggs
1/3 cup melted butter
½ cup of cauliflower rice (see recipe below)

Directions:
Preheat oven to 350 degrees.
Wisk together the dry ingredients.
In a separate bowl, wisk together the wet ingredients.
Combine the wet and dry ingredients.
Line the bottom of a loaf pan with parchment paper.
Spread dough into the loaf pan.
Bake 35 to 40 minutes.
Let cool for 10 minutes. 
Remove bread from pan and cool on a wire rack.

Directions for cauliflower rice:
Grate  ½ of a head of cauliflower, using only the florets, not the stems.
Microwave for 8 minutes.
Use only ½ cup of cooked cauliflower in the recipe.

Low-Carb Pizza by Thin and Thinner (New Recipe!!)

Low-Carb Pizza by Thin and Thinner

This recipe makes a delicious pizza that is appealing to the eye as well as delicious. It is quick and easy to make. It received the seal of approval from my not-so-low-carb husband!
Ingredients:
Crust:
½ cup almond flour
½ tsp. baking powder
1/16 tsp. xanthan gum
¼ tsp. salt
1 packet of Truvia
¼ cup of shredded cheddar cheese
1 beaten egg

Topping*:

2 tbsp. tomato sauce
1 cup of shredded mozzarella cheese
8 thin slices of pepperoni

Directions:

Pre-heat oven to 375 degrees.
Whisk almond flour, baking powder, xanthan gum, salt, Truvia, and cheese until well blended.
Add the beaten egg. Mix well.
Pour onto a buttered sheet of parchment paper on a large cookie sheet.
Spread batter on sheet as flat as possible with a spatula until it is a 6 inch round diameter.
Bake at 375 degrees for 14 minutes.
Transfer pizza crust to a sheet of tin foil and put it back on the cookie sheet.
Spread the tomato sauce on the crust.
Add the mozzarella and pepperoni.
Fold the foil over any exposed crust (so that it will not burn under the broiler).
Broil for 2 minutes.

Slice into 4 wedges with a pizza cutter.

Serves 2

(4 net carbs plus Truvia for entire crust)

* Any of your favorite pizza toppings will work on this!

Low Carb & Gluten Free Pizza Crust (Recipe, No Yeast)



Low Carb Pizza Crust:

This recipe is simple and quick to make (no yeast involved)!
The longer it cooks, the more crisp the crust gets.
It's quite delicious and has recieved the "non" low carb dieters seal of approval.





½ cup almond flour
1/8 tsp. salt
¼ tsp. baking powder
1 egg white
1/16 tsp. Xanthan gum
1 packet Truvia
¼ cup Greek yogurt

Mix dry ingredients. Stir in Greek yogurt.
Rub butter onto parchment paper on a large flat pan.
With a spatula, spread the pizza dough into a thin round shape on the buttered paper.
Bake at 375 degrees for 20 minutes.

Top with tomato sauce, mozzarella cheese, and pepperoni.*
Bake for an additional 20 minutes.
*Or, top with any interesting toppings of your choice!
